Ultra-green kale and zucchini wrap with avocado, feta, sesame and cumin

Ingredients
- kale, 1/4 bunch (leaves stripped)
- lime, 1 (juice)
- olive oil, 1 tbsp
- zucchini, 1 large
- ground cumin, 1/2 tsp
- wraps, 4
- avocado, 1/2 (or more to taste)
- feta, 100 g (I prefer Danish)
- sesame seeds, 2 tsp (preferably toasted)
Instructions
- Combine the kale leaves, lime juice, 1–2 tsp olive oil, salt, and pepper in a small container and shake to coat. Set aside.
- Slice the zucchini into thin strips. Heat olive oil in a pan and add zucchini. Turn occasionally, frying until both sides are browned. Towards the end, add cumin, salt, and pepper.
- Meanwhile, place a wrap on each of 2 plates and spread 1/8 of an avocado and about 25 g of feta along the centre, leaving 4 or 5 cm at the end to fold up. Sprinkle with sesame seeds.
- When zucchini is done cooking, add zucchini and kale to wrap and sprinkle with more sesame seeds if desired. Season to taste.
- Fold the end of the wrap towards the fillings then fold in both sides. Enjoy!
