Toast with grilled zucchini, feta and lentils

Ingredients
- bread, 4 slices
- olive oil, 2 tsp
- zucchini, 1 (large)
- feta, 100 g (I prefer Danish)
- brown lentils, 1 can (drained and rinsed)
- lemon juice, a few squirts
- mint, quarter of a bunch (torn; optional)
- garlic, 1 tsp (minced; optional)
Instructions
- Cut zucchini in half acrossways and slice thinly lengthwise. Add olive oil to pan and cook zucchini until starting to brown. Add garlic if using. (If you want to speed things up, just cook the zucchini in the microwave instead.)
- When zucchini only has a few minutes to go, toast bread then spread with feta.
- Add zucchini, lentils, more crumbled feta, lemon juice, and torn mint leaves if using.
- Enjoy!
