Toast with eggs, butter, cheese, mayo and greens

Ingredients

  • eggs, 6 (poached)
  • bread, 4 slices
  • butter, ~30 g (preferably spreadable)
  • tasty cheese, 1/2 cup (shredded)
  • kewpie mayonnaise, to taste
  • baby spinach, 60 g
  • sumac (to taste)

Instructions

  • Poach the four eggs to your liking (or fry them or scramble them, your call!)
  • Grill the slices of bread under the griller, flipping them when they're done to your liking.
  • Cook the opposite side for about half the amount of time, then spread with butter, sprinkle with cheese, and tuck it back under the grill until the cheese melts.
  • Remove toast from under griller and add 1.5 eggs to each piece, chopping roughly to cover toast.
  • Add salt, pepper, mayonnaise and baby spinach to taste, and sumac if using.
  • Enjoy!
