Toast with eggs, butter, cheese, mayo and greens

Ingredients
- eggs, 6 (poached)
- bread, 4 slices
- butter, ~30 g (preferably spreadable)
- tasty cheese, 1/2 cup (shredded)
- kewpie mayonnaise, to taste
- baby spinach, 60 g
- sumac (to taste)
Instructions
- Poach the four eggs to your liking (or fry them or scramble them, your call!)
- Grill the slices of bread under the griller, flipping them when they're done to your liking.
- Cook the opposite side for about half the amount of time, then spread with butter, sprinkle with cheese, and tuck it back under the grill until the cheese melts.
- Remove toast from under griller and add 1.5 eggs to each piece, chopping roughly to cover toast.
- Add salt, pepper, mayonnaise and baby spinach to taste, and sumac if using.
- Enjoy!
