Bruschetta-inspired tomato and balsamic pizza

Ingredients

  • pizza bases, 2
  • tomato pesto, 1/2 jar (or basil pesto)
  • mozzarella, grated, 2-3 cups
  • tomatoes, 3-5 (sliced; I use kumatos)
  • paper towel, about 4 sheets (or clean Chux)
  • red onion, 1 large (wedges)
  • red capiscum, 1 (thin strips)
  • fresh basil, handful (roughly chopped)
  • feta, 100 g (I use Danish)
  • baby rocket, 100 g (or to taste)
  • balsamic glaze, to taste
  • olive oil, to taste (optional)

Instructions

  • Preheat oven to 200°C, and heat pizza stones/trays.
  • Coat the pizza bases with pesto and sprinkle with mozzarella.
  • Blot excess liquid away from tomato slices with paper towel and arrange evenly on pizza. Season to taste.
  • Add red onion, capsicum, basil, and crumbled feta.
  • Coat with mozzarella cheese and bake for 10 minutes.
  • Remove pizza from oven and sprinkle with rocket.
  • Drizzle with balsamic glaze and olive oil if using. Enjoy!
