Lentil, tomato and feta pasta with red onion and basil

Ingredients
- penne, 250-500 g (or other pasta)
- brown lentils, 2 tins (drained and rinsed)
- tomatoes, 5-6 (diced)
- cucumber, 1 (optional; I use Lebanese)
- red onion, 1 (small, diced finely)
- basil, 1 bunch
- lemon juice, 2-4 tbsp (to taste)
- olive oil, to taste (optional)
- feta, 200 g (I use Danish)
Instructions
- Bring a pot of water to the boil and cook pasta until al dente.
- Mix lentils, tomatoes, cucumber, red onion, basil, lemon juice, and olive oil if using in a large mixing bowl. Season to taste.
- Add pasta when ready and serve topped with crumbled feta.
