Lentil, tomato and feta pasta with red onion and basil

Ingredients

  • penne, 250-500 g (or other pasta)
  • brown lentils, 2 tins (drained and rinsed)
  • tomatoes, 5-6 (diced)
  • cucumber, 1 (optional; I use Lebanese)
  • red onion, 1 (small, diced finely)
  • basil, 1 bunch
  • lemon juice, 2-4 tbsp (to taste)
  • olive oil, to taste (optional)
  • feta, 200 g (I use Danish)

Instructions

  • Bring a pot of water to the boil and cook pasta until al dente.
  • Mix lentils, tomatoes, cucumber, red onion, basil, lemon juice, and olive oil if using in a large mixing bowl. Season to taste.
  • Add pasta when ready and serve topped with crumbled feta.
